Portion sizes influence consumption behavior. One might assume that larger packages should be left to customers' discretion—allowing them to decide for themselves how much to consume. However, research demonstrates otherwise: people eat more from large packages, pay more for "portions" regardless of actual quantity, and stop eating at the last piece of a unit. The question is: How strongly does the perceived unit determine behavior? Which factors make a portion a psychological reference point—and what evidence supports this phenomenon?

The Popcorn Experiment

Andrew Gelitin and his colleagues conducted an experiment at Wharton School in 2011 that demonstrated the power of the unit. They gave 158 moviegoers free popcorn in different containers: either one large bag or two medium-sized bags—with the total amount being identical. The setting: fresh, tasty popcorn before a movie. The surprising result: visitors with one large bag ate an average of 45.3% more than those with two medium bags. The physical quantity was the same, but the psychological unit was different. One bag equals one portion. The division into two containers created two units and thus a natural stopping point.

The study of the outdated popcorns

Brian Wansink conducted a revealing experiment at Cornell University in 2005. He gave 158 moviegoers free popcorn—but it was 14-day-old, stale popcorn that the participants themselves described as "disgusting." Half received medium-sized containers (120g), while the other half received extra-large ones (240g). Despite the poor taste, people with large containers ate 53% more—an average of 173 calories compared to 112 calories. The striking finding: Even with a negative taste experience, the visual cue dominated conscious decision-making. The container size defined the "normal" portion, not appetite or enjoyment. When questioned afterward, 77% of participants claimed that container size had not influenced their behavior.

Which principle for Customer Experience Design can be derived from this? The definition of the unit influences behavior more powerfully than rational needs analysis—a principle that companies can strategically leverage to shape purchase decisions and usage patterns. Through deliberate portioning of products, services, or information, organizations can control both consumption quantities and perceptions of value and appropriateness. This effect is particularly potent for routine decisions and emotional purchases, though it diminishes in highly involved, rational decision-making contexts. The critical factor is that the chosen unit must appear intuitive and logical to the target audience—artificial or arbitrary portions can erode trust. The following guidelines demonstrate how to implement this principle in practice.

Guidelines

Smaller units as standard

Define the default unit as intentionally small. Rather than offering a large package, present several small modules. Customers who want more can select additional options—but the psychological default remains the small unit. This approach is particularly effective with subscriptions: Instead of "annual subscription with monthly cancellation option," use "monthly subscription with annual option." The perceived unit becomes smaller and the barrier to entry lower.

Visually divide into sub-units

Use visual design to break large quantities into smaller, manageable units. For example, with medication: Instead of presenting 30 tablets in a single bottle, use blister packs containing 3 rows of 10 tablets. Each blister becomes a distinct psychological unit. This approach promotes adherence because patients are motivated to complete one full unit (one blister) rather than stopping partway through. For digital products: Divide lengthy forms into numbered steps—each step becomes a completable unit that users can finish before moving forward.

Communicate price per unit

Communicate price per unit Present prices not only in absolute terms, but also per meaningful unit. Instead of "1,200 euros annual license," use "100 euros per month" or "3.30 euros per day." The smaller unit lowers the perceived price barrier and makes the value more tangible. Critical consideration: The unit must align with actual usage patterns. "Per day" works for daily use, not for sporadic use.

Upgrade Paths as Unit Expansion

Design upgrade paths as logical extensions of existing tiers, not as entirely separate products. For example: a Basic package with 3 modules and a Premium package with 5 modules (Basic + 2 additional modules). This makes the mental calculation simpler: "I already have the complete Basic package—now I'm just deciding whether I need those two extra modules." This approach is psychologically easier than comparing two distinct product ecosystems.
